PASTA FAGOLI

This recipe is an original. By that I mean I have put my own touches to it, creating my own version. There are several variations, but I feel my take on this dish is a little different. The original dish, from the boot of Southern Italy, required one type of bean. I, however, require three or four different types of beans. Many years ago I tried my version on my father-in-law. He was Italian from Southern Italy and he fell in love with this dish.
